Sushi rice, cooked

  1. Preheat the oven to 180°C, wash and clean the Brussels sprouts, spread them on a baking tray and mix with olive oil.
  2. Cook sushi rice according to instructions. Tip: works best in a rice cooker.
  3. In a bowl, add lime juice, fish sauce, chili, crushed garlic clove, finely chopped shallot, sugar and Boiled Peanuts Umami and mix everything together. Add a little water if necessary.
  4. After about 20 minutes, take the Brussels sprouts (leaves should be browned) out of the oven and put them directly into the bowl with the Boiled Peanuts Umami. Stir well and let sit for a while.
  5. Then put the sushi rice in a bowl and arrange the Brussels sprouts and boiled peanuts on top. Serve lukewarm.
